Ya sé, ya sé, estamos a mediados de marzo y todavía no me he puesto con la receta del mes de marzo, pero todo se andará.... sólo quería aprovechar los últimos días del invierno y sus magníficas sopas que tan bien acompañan los bialys.

Partiendo de la receta de Hamelman, he hecho un prefermento (84 gr de harina y 48 gr de agua con una pizca de levadura) y porciones pequeñas de 50 gramos. Después de la segunda fermentación la masa ha resultado mucho más manejable que la primera vez que hice los bialys: al estirar con los pulgares para hacer la hendidura del centro la masa mantenía su forma. Y en el horno han aumentado sólo los bordes resultando esos bialys irregulares con el centro totalmente hundido tal y como recordaba.

He rellenado dos con medio ajo picadito, migas y flor de sal

Y la otra media docena con media escalonia picada, migas y semillas de amapola

Y han caído para comer junto a una crema de pescado y verduras

Me gustó mucho la tensión que conseguí en el boleado. Cuando se hincharon estaban duros como pelotas de goma.
La receta es la que pone frangullaspolochan al principio del hilo, la de Hamelman.
El hueco algo pequeño, relleno con láminas de ajo y unas semillas de sésamo. No tenía cebolla.
