Volaron todos.
La misma receta que en su hilo, aunque con la primera retardada y con este calor la mitad de levadura.
Entrada desde el telefono, a ver si se sube buen la foto, si no luego la cuelgo.

Y de la misma masa este intento de corona húngara del libro de Hamelman, y digo intento porque no he formado como quería, esta masa era muy blanda para esto, pero hacía tiempo que no la hacía y me he arriesgado.

Ayer le daba vueltas a algo que quizá en verano se nos olvida un poquejo. Lo agradecido que es el pan. Sólo harina, agua y sal. Horas fermentando. Haces una bolitas, las aplanas con la mano, con tus peores o mejores mañas pero sin ponerle tampoco una atención significativa. Pones la sartén y sale un pan sano, rico y con esos quemazos que a mi me resultan preciosos.

Muy bonita esa miga de brioche.

Esta semana he probado a introducir cúrcuma, la verdad es que da un color muuuuuy bonito sobretodo en directo.

Son dos panes de trigo común y centeno integral (75-25%), además llevan un soaker de semillas (30%), de sésamo, amapola, chia, lino dorado, girasol, calabaza y mijo, 80% agua y fermentación natural (25%) masa madre durante unas 15 horas totales.
