El sábado compré por primera vez un kilito de harina de kamut y ahora mismo estoy haciendo un pan con ella. Nada más refrescar la masa madre me he dado cuenta de que no era una harina de trigo al uso. Es amarilla y granulosa, y absorbe bastante agua. He buscado un poco por los archivos del foro para ver qué experiencia tiene la gente con esta harina y he visto que realmente no hay un hilo específico sobre ella. ¡Eso hay que solucionarlo!

Propongo que vayamos comentando aquí todo lo relacionado con el kamut, los tipos que se pueden encontrar, las peculiaridades que tiene, algunas recetas o ideas... Todo es bienvenido. Yo de momento estoy haciendo un pan muy básico para ver qué me ofrece de nuevo, aparte del colorcito amarillo tan rico. 8-) ¿Alguien puede contarnos algo?

Es cierto que absorbe mucha agua, y también (y cuidado) que fermenta como un tiro.

Kamut es una marca registrada, que vende trigo khorasán ecológico (esta transliteración puede resultar extraña para lectores de español, es un sonido gutural parecido a la jota; aunque diferente de la jota, yo la verdad usaría jorasán, más natural en español). viene información sobre el trigo, variedades, etc. Puedes ver una tabla de los trigos donde se ve en qué lugar se sitúa este trigo.

En la del trigo, y desmiente el mito de que sea el trigo de los faraones.

También en la web se encuentra (incluso el origen del nombre)

En la tienda de harinas donde solía comprar en Barcelona lo tenían también en grano; a simple vista se ve que el grano es diferente, es como los trigos duros, amarillo y vítreo, no con un interior blanco.

Es curioso lo que pones en el título de "persa". En tienen tanto trigo Kamut (que es una marca registrada) como uno que llaman persa. Según he entendido (vaya, que nadie de La Grana me lo ha dicho ni confirmado), para usar el nombre Kamut, pues tienes que usar la marca registrada... ellos tienen los dos, casualmente el persa es mucho más barato, siendo la harina similar; esas harinas granulosas de trigo duro a las que me recuerda (por ejemplo la recia de El Amasadero, otra que recuedo que me trajeron de Yecla, cosas así). Tiene un sabor particular, dulzoncito (como cuando haces cosas de trigo duro) pero con una nota más de eso que en inglés dicen anuezada :) otro pancito. Helo:

Me encanta el google....vamos, que se encuentra uno de todo.

Sobre la harina de Kamut, yo he encontrado opiniones contradictorias en distintos sitios de Internet. La harina de kamut tiene gluten evidentemente, pero al parecer el gluten no se comporta igual que el de la harina de trigo: en algunos sitios se dice que tiene mas extensibilidad y en otros que no. La mayor parte de estos comentarios los he leido en The fresh loaf, y me han dejado hecha un lio....alguien me lo explica, porfa??? :?:

Lo que si se es que generalmente la harina de kamut se combina con otras harinas para hacer pan, y aqui va mi segunda pregunta: Si hacemos un pan con 100% de harina de kamut, se queda la hogaza muy plana? :?:

En varios posts en The fresh Loaf y otros sition he leido que la combinacion de espelta y kamut para hacer pan es genial, alguien la ha hecho? Yo voy a ver si lo intento en cuanto me llegue la harina de espelta que he pedido.
