Asunto:  Culo del pan con piedra de horno
Hola,
Compré hace poco la piedra de horno de Doctor Oetcker, y me está decepcionando un poco. Pensé que me iba a tostar mucho mas el culo del pan, pero no aprecio muchos cambios. OS envío la foto del último pan.
Espero mucho de la piedra, o hago algo mal? precaliento el horno 45 minutos para darle tiempo a calentar bien. siempre con aire.
Veo culos algo harinados. Se suele echar harina en el papel?
Los agujeritos del culo son normales? este entró un poco sobrefermentado porque tuve que salir de casa y la primera fermentación se me fue casi a 5 horas con 25º, la segunda la pasó en la nevera.

Yo probaba sin el papel, a ver qué pasa. O cambiando el papel por salvado, harina de maíz o sémola.

Hola,
Caliento casi una hora otras veces, pero no creo que sea el problema. porque las pizzas las hace muy bien, y el grosor de la piedra no es tan grande, es de medio centimetro. Ahora he probado a darle la vuelta un poco, para que por lo menos lo endurezca un poco más.
No se... nadie tiene más opiniones? apreciando las ya comentadas. ;)
