Hoy le he hecho a mi madre mis panecillos de leche, que hacia siglos que no preparaba.

Siguen saliendo igual de tiernos.

Dos panecillos de una hornada que he hecho para la comida.

Nos habíamos quedado sin pan y he hecho lo que no me gusta hacer y que habré hecho 2-3 veces en mi vida.

Esta mañana quería ir a ver una carrera, así que he puesto a amasar 5 minutos trigo y centeno y le he metido un 2% de levadura fresca y ahí se ha quedado, he venido, he formado 7 panecillos y ahora listos para la comida.

Y sigue siendo un señor pan al lado de la basura que venden por ahí.

Unos panecillos de leche:
200 g harina gran fuerza eco de Roca
200 g harina trigo T80 Molí de Picó
210 Tang zhong (35 harina T80 + 175 suero de mozzarella)
15 g mantequilla
1 cucharada de postre de miel
125 g masa madre sólida de trigo T80
1,5 g levadura fresca
8 g sal

Mezclado de la harina, la leche, el tang zhong y la miel. Amasado con am,asadora. Cuando está desarrollado el gluten, añadir la mantequilla, la sa l y la levadura fresca.
Fermentación en bloque de 4h 30' a TA. División, formado y segunda de un par de horas también a TA.
Horneados con vapor y calor sólo abajo a 230º los primeros 15'. Luego 10' más a 180 (calor arriba y abajo).
