Abro este hilo para dar cabida a recetas, fotos, comentarios de lo que vamos haciendo en el día a día. Un lugar donde tengan cabida nuestros progresos (y fracasos). Propongo abrir (y cerrar) el hilo semanalmente. De aquí pueden salir recetas para su sección correspondiente, preguntas para el apartado de "técnica/ingredientes", incluso para "ciencia del pan". ¿Qué has horneado esta semana? Este es un hilo semanal que se abre el lunes y se cierra el domingo. Para ver los panes de otras semanas, no tienes más que consultar los archivos. Puedes consultar un archivo de todos los diarios (ordenados por semanas) .

Entrenando bien la MM salen panes maravillosos. Esta miche de Poilâne es un ejemplo. Merece la pena tener panciencia. La MM es de centeno integral Rincón del Segura y la harina es integral del Molino de Cerecinos, ambas de cultivo ecológico. La receta, del libro "El aprendiz de panadero", del maestro Reinhart. Para empezar la semana, un gran pan ya que pesa casi 1,9 kg. Preciosos panes, a ver si puedo poner luego las fotos de los míos, aunque no tienen nada que ver Namarie, y para todos los demás, ¿cómo lográis hidratar tanto las masas y que os guarden la forma? es que a mi se me aplanan en cuanto quiero hidratarlas un poquito más de la cuenta. Gracias a todos.

Mikelillo, no importa si se te aplanan, si el gluten está bien formado subirán bien en el horno. Lo importante es formar bien el gluten: no añadas toda el agua, amasa bien, y luego añades el agua restante poco a poco. De esta manera y con una suela de horno bien caliente (chapón, piedra, barro, etc) tendrás un pan con volumen.

Bonitos panes por aquí.... El mio para no variar, en molde. Esta vez un Tenía en trigo sarraceno en el congelador desde el verano y no me acordaba . Traído de Alemania.
